Highland Park is a Single Malt whiskey produced since 1798 in one of the oldest distilleries, located on the island of Mainland in the Orkney archipelago - the northernmost region of Scotland, which for centuries was under the rule of the Vikings. Highland Park is the only distillery where much of the work is still done by hand following the five primal rules of Scotch whiskey production. The greatest influence on the unique taste and character of Highland Park is the traditional hand malting method of barley, unique, local and very aromatic flower peat extracted from 9,000-year-old seams and casks used in the maturation process, exclusively from Spanish Oloroso sherry.
