The series of alcohols consists of three unique products such as;
Octomore 12.1, Octomore 12.2 and Octomore 12.3
The entire series consists of very natural products. During their production, dilution, caramel coloring and cold filtration were abandoned.
This is the 12th edition of peated whiskey matured in oak barrels.
Octomore 12.3 is a single malt. The barley for production was grown in Church Field on the Octomore farm by farmer James Brown. Barley grown on Islay has been distilled through tall, narrow-necked alembics.

As a curiosity, it is worth quoting how and where Octomore was aged: 75% of Octomore whiskey was aged in former American whiskey casks, while the remaining 25% spent five years maturing in original Pedro Ximenez Solera casks from Jerez bodega Fernando de Castilla. This barley liquor from Islay breathes slowly and delicately for five years, its salty citrus marine note due to the place where the barley is grown and the proximity of the warehouses to the sea. Pedro Ximenez casks contain sweet notes such as dried fruit aromas, which are emphasized by the rich smoke of Octomore dry peat.

Octomore 12.3 is a unique whiskey in many respects - one distillery, one vintage and one field from which the barley used for whiskey production comes. Concerto barley was grown in Church Field on Octomore Farm by farmer James Brown. Interestingly, 75% of this whiskey was matured for 5 years in American whiskey casks, while the remaining 25% spent 5 years in first fill Pedro Ximenez sherry casks from Fernando de Castilla.
